You can substitute eggs with applesauce, aquafaba, ground chia, silken tofu, yogurt, mashed banana, or tofu. The best substitute depends on the recipe and your desired texture and flavor.

Applesauce
A healthy substitute that can make baked goods moist and chewier
May make baked goods sweeter and give them a slight apple flavor
Aquafaba
A low-calorie, low-fat substitute made from the liquid of canned chickpeas
Contains trace amounts of protein and fiber
Ground chia
A binding agent that can be used in breads and cookies
Mix 1 tablespoon of ground chia seeds with 3 tablespoons of water, and let it sit for about 20 minutes
Silken tofu
A neutral substitute that can be used as a binder in baked goods
Blend silken tofu into a smooth puree to replace one egg
Yogurt
A substitute that thickens similarly to eggs and can be used in cakes, cupcakes, and breads
